Apples and Honey Tart
Ingredients:
- 1/2 cup honey
- 2 Tbl lemon juice
- 3 apples peeled, cored and cut into 8-10 wedges
- 1/4 cup sugar
- 6 Tbl margarine softened
- 1/4 cup dark brown sugar
- 1 tsp vanilla
- 2 large eggs
- 1 tsp grated lemon rind
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 Tbl sugar
- 1/2 tsp cinnamon
Directions:
- Preheat oven to 350. Combine honey and lemon juice in large skillet. Bring to simmer over medium heat. Add apples, cook 12-14 min until almost tender, stirring occasionally to coat apples. Remove from heat and set aside.
- In bowl of mixer combine 3/4 cup sugar, margarine, brown sugar, and vanilla. Beat on medium until well blended (45 sec – 1 min). Add eggs and beat. Beat in lemon rind.
- In separate bowl, combine flour, baking powder, and salt. Gradually add flour mixture to batter. Beat on low until well blended.
- Coat 9-inch springform pan with cooking spray. Pour batter into pan. Remove apples from skillet with slotted spoon. Discard liquid.
- Arrange apples in concentric design on top of batter.
- Combine 1 Tbl of sugar with cinnamon. Sprinkle evenly over tart.
- Bake for 1 hour. Cool completely and release sides of springform pan.
