Apples and Honey Tart

Apples and Honey Tart


  • 1/2 cup honey
  • 2 Tbl lemon juice
  • 3 apples peeled, cored and cut into 8-10 wedges
  • 1/4 cup sugar
  • 6 Tbl margarine softened
  • 1/4 cup dark brown sugar
  • 1 tsp vanilla
  • 2 large eggs
  • 1 tsp grated lemon rind
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 Tbl sugar
  • 1/2 tsp cinnamon


  1. Preheat oven to 350. Combine honey and lemon juice in large skillet. Bring to simmer over medium heat. Add apples, cook 12-14 min until almost tender, stirring occasionally to coat apples. Remove from heat and set aside.
  2. In bowl of mixer combine 3/4 cup sugar, margarine, brown sugar, and vanilla. Beat on medium until well blended (45 sec – 1 min). Add eggs and beat. Beat in lemon rind.
  3. In separate bowl, combine flour, baking powder, and salt. Gradually add flour mixture to batter. Beat on low until well blended.
  4. Coat 9-inch springform pan with cooking spray. Pour batter into pan. Remove apples from skillet with slotted spoon. Discard liquid.
  5. Arrange apples in concentric design on top of batter.
  6. Combine 1 Tbl of sugar with cinnamon. Sprinkle evenly over tart.
  7. Bake for 1 hour. Cool completely and release sides of springform pan.
