Apple Baklava

Apple Baklava

Adapted from Michael Symon’s recipe on


1 pound thawed filo dough

1 cup melted butter

2 lemons juiced and zested

6 tablespoons honey

2 teaspoons cinnamon

3 cups diced Granny Smith apples

1 cup chopped toasted walnuts

1 cup chopped toasted pistachios

2 cups chopped toasted almonds

½ cup honey

1 ts Grated lemon peel

1 ts Cinnamon

1 1/2 cups sugar

1/2 cup honey

1 pint water

1 lemon rind


To make filling sauté 2tbs honey, cinnamon, and apples for ten minutes. Add lemon juice and zest and 4tbs honey for 3 minutes set aside to cool.

To make nut mixture combine all nuts with honey lemon peel and cinnamon

On a sheetpan lined with parchment paper, lay down 1 sheet of filo and brush with butter. Repeat process with 3 more sheets. Cover remaining sheets with damp towel and set aside. Spread 1/2 of nut mixture onto buttered filo stack. Top with another stack of buttered filo. Repeat process 4x, alternating with the apple mixture until mixtures and filo are gone (there should be 4 layers).

Bake in a preheated 350 degree oven for 55 minutes (May also try 400 degrees for 35-40 minutes). Mix sugar, honey, water and lemon and bring to simmer. Remove lemon rind and pour over baklava. Bake 5 minutes. Let soak overnight, cut into squares and serve.
