Mom’s Apple Cake

Mom’s Apple Cake

6 apples (pared and cored)

5 Tablespoons sugar

5 teaspoons cinnamon

2 cups flour
2 cups sugar
3 teaspoon baking powder
1 teaspoon salt
1/2 cup oil

4 eggs

1/4 c orange juice

1 t vanilla


  1. Combine apples, 5 tablespoons sugar and 5 teaspoons cinnamon and set aside.
  2. Sift dry ingredients together.  Make a well.  Add oil, eggs, juice and vanilla.  Beat with wooden spoon or spatula.
  3. Pour 1/3 batter into chiffon cake tube pan.  Make a ring of apple mixture.  Pour another 1/3 of batter in pan.  Make another ring of apples (don’t let apples touch side of pan).  Top with batter.
  4. Preheat oven to 375 degrees.  Bake for 45 minutes.
  5. Lower oven to 350 degrees. Cover pan with aluminum foil.  Bake another 45 minutes.
