John’s Jewish Apple Cake

John’s Jewish Apple Cake

Serves: 12
Ingredients:
4 apples, peeled and sliced
3 T. lemon juice
2 t. cinnamon
1/8-1/4 C. plus 2 C. sugar
1 C. vegetable oil
4 eggs
3 C. flour
3 t. baking powder
1/2 t. salt
7 T. orange juice
2 t. vanilla
Directions
- Mix together and set aside the sliced apples, lemon juice, cinnamon and 1/8-1/4 cup sugar.
- In a large bowl, beat together the 2 C. sugar and oil.
- Add eggs and beat well.
- Add the flour, baking powder and salt. Mix well. Then add orange juice and vanilla. Beat mixture until just smooth.
- In a greased and floured 10” tube pan, place a layer of batter, then a layer of apples, repeating until all batter and apples are used, ending with a layer of batter.
- Bake at 350 degrees Fahrenheit for about 60 minutes, or until brown.
