Judges went back for seconds of this entry in the 2nd Annual Jews’ Next Dor Apples & Honey Cook-off.

John’s Jewish Apple Cake

Serves: 12

Ingredients:
4 apples, peeled and sliced
3 T. lemon juice
2 t. cinnamon
1/8-1/4 C. plus 2 C. sugar
1 C. vegetable oil
4 eggs
3 C. flour
3 t. baking powder
1/2 t. salt
7 T. orange juice
2 t. vanilla

Directions

  1. Mix together and set aside the sliced apples, lemon juice, cinnamon and 1/8-1/4 cup sugar.
  2. In a large bowl, beat together the 2 C. sugar and oil.
  3. Add eggs and beat well.
  4. Add the flour, baking powder and salt. Mix well. Then add orange juice and vanilla. Beat mixture until just smooth.
  5. In a greased and floured 10” tube pan, place a layer of batter, then a layer of apples, repeating until all batter and apples are used, ending with a layer of batter.
  6. Bake at 350 degrees Fahrenheit for about 60 minutes, or until brown.
