These are the cookies my mom made when I was growing up. The recipe is from a Betty Crocker cookbook from 1980. And of course, the cookbook naturally opens to the page with the recipe for Oatmeal Chocolate Chip Cookies, complete with bits of batter on the pages, smears of chocolate, three post it notes and two recipes written in the margins. 🙂 Yay for cookies!!!!
1/2 cup butter or margarine, softened
1 1/2 cups sugar
1 egg
1/4 cup water
1 teaspoon vanilla
1 cup all-purpose flour
3 cups quick-cooking oats
1/3 cup cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
1 package (6 oz) semisweet chocolate chips
Heat oven to 350. Mix butter, sugar, egg, water and vanilla. Stir in remaining ingredients.
Drop dough by rounded teaspoonfuls 1 inch apart onto ungreased baking sheet. Bake until almost no imprint remains when touched with finger, about 14 minutes. Remove immediately from baking sheet; cool.
These freeze very well. 20 minutes before serving remove from freezer and unwrap. Place on serving platter, thaw uncovered at room temperature. Store no longer than 2 months.
Makes approximately 6 dozen cookies. The last time I made them I got 100 cookies, but I kept them small and cute. 🙂
